Restriction enzymes are used to recognize a specific sequence of nucleotides and cut double stranded DNA into smaller fragments at a specific location. Each restriction enzyme recognises different DNA sequences.
HinfI is a Restriction Endonuclease purified from an Escherichia coli strain that carries the HinfI gene from Haemophilus influenzae. HinfI activity is blocked by some combinations of overlapping CpG methylation. The optimum reaction temperature is at 37 °C.
